Ingredients

1 serving
  1. 2medium eggplants, cut diagonally into thick slices about 1/3 inch
  2. 150-200 gramsground pork
  3. 2-3large cloves garlic, minced
  4. 1little ginger, minced
  5. 1little dried chili, sliced (optional)
  6. 2 tablespoonsmiso
  7. 1 tablespoonsoy sauce
  8. 1 tablespoonmirin
  9. 1 tablespoonsake
  10. 1 teaspooncornstarch
  11. 1little broth
  12. Vegetable oil
  13. 1little sesame oil
  14. 1little green onion, sliced

Steps

  1. 1

    Prepare all ingredients for stir-frying. Soak the cut eggplant in water to prevent browning. Mix all the seasonings together.

    Drain the eggplant and pat dry. Stir-fry in oil until slightly caramelized, then set aside.

    Add a little oil to the pan. Add minced garlic, ginger, and dried chili. Stir-fry until fragrant, then add the ground pork.

    Cook until the pork is done. Add the seasonings and a little broth, stirring to combine.

    Add the eggplant back to the pan and stir-fry together. Adjust seasoning to taste.

    Mix cornstarch with a little water and add to the pan. Add a bit of sesame oil and stir to combine.

    Serve on a plate, garnish with sliced green onion, and enjoy 😊
