In a bowl have your measured sugar, margarine and lemon zeast. Beat the ingredients until fluffy and smooth and ensure you are able to notice change of colour.

Put together your eggs and vanilla essence together. As soon as the above mixture is ready add in the eggs one by one as you continue mixing the ingredients

In a bowl put in your measured flour and baking powder and sieve into the mixture above.

Fold in the mixture and pour into a greased baking tin and bake.

Let it cool before icing
