Ingredients

  1. 1/2 litrefull cream milk
  2. 10almonds blanched and peeled
  3. 10pistachio blanched and soaked
  4. 10kishmish/ raisins
  5. 10cashew nuts soaked
  6. 3 tbsppoppy seeds khus-khus soaked in water
  7. 5-6 threads of saffron
  8. 5-6green catdamon
  9. 3/4 cupsugar
  10. 8-10rose petals
  11. 1 inchcinnamon stick
  12. 3-4black peppercorns

    Thandai is the perfect traditional drink to serve on special days and festive occasions like Holi and Diwali.

  2. 2

    Grind together almonds, cashewnuts, pistachios, melon seeds and poppy seeds with a little milk to a fine paste.

  3. 3

    Bring milk to a boil in a pan. Add saffron and mix.When the milk begins to boil add sugar and simmer till the sugar melts.

  4. 4

    Grind green cardamoms, dried rose petals, cinnamon and black peppercorns to a fine powder.

  5. 5

    Add the paste to the milk and mix well. Simmer and boil for three to four minutes.

  6. 6

    Now strain the milk and then add the powdered masala to the milk and mix well. Chill the milk and serve.
