In maida add suji, ajwainand salt. Mix it well

Now put 1 cup hot oil in the maida as moin so it just hold the shape like this

Make a tight dow with water and rest it for 20 min. Meanwhile we prepare besan stuffing

Heat a kadhayi. Put 2 spoon oil. Heat the oil. Put jeera when crackled add crushed garlic and green chilli. Cook for 1 minute

Now add red chilli powder, haldi powder and salt for taste. Cook on slow flame for 1/2 minute

Now add besan,jeera, dhaniya powder, crushed fennel and coriander seeds. Roast it on low flame till turns aromat

Let the stuffing cool. Add little water to the stuffing to make it little moist.

Take the dow. Knee it well to make soft. Make small balls. Flattened it with hand.

Put the stuffing in that and apply little water over the end and cover it. Roll it like small puri.

Deep fry the kachori in medium flame for 10 min to make it more crispy

Your kachoris are ready. Serve with green chutney, green chilli or tomato sauce
