Ingredients

  1. 2.2 lbs (1 kg)large pieces of beef or lamb
  2. 2.2 lbs (1 kg)bone-in chicken
  3. 2large onions, sliced julienne
  4. 1.1 lbs (500 grams)carrots, cut lengthwise into large pieces
  5. 1.1 lbs (500 grams)zucchini, cut lengthwise into large pieces
  6. 1.1 lbs (500 grams)yellow squash, cut lengthwise
  7. 1.1 lbs (500 grams)potatoes, cut lengthwise
  8. 1.1 lbs (500 grams)tomatoes, peeled and chopped
  9. 3 cupscooked chickpeas (about 500 grams)
  10. 1 cupfresh cilantro
  11. 1 cupdried apricots
  12. 2.2 lbs (1 kg)couscous
  13. 3 tablespoonstomato paste
  14. 1 tablespoonground ginger
  15. 1 tablespoonpaprika
  16. 1/2 tablespoonsaffron
  17. 1 teaspoonground cardamom
  18. 1 teaspoonground cloves
  19. Melted butter
  20. Oil
  21. Salt and pepper

    Heat oil in a pot over medium heat. Add the meat and sauté briefly. Add the onions and spices, and stir. Add the tomato paste and chopped tomatoes, and mix well.

    Pour in hot water (use plenty, as you’ll need about 4 to 5 cups for the couscous later) over the meat. Cover the pot and let it simmer over low heat. Skim off any foam that forms on top.

    After one hour, brown the chicken in a separate pan, then add it to the pot with the meat. Let it simmer for 10 minutes, then add the chickpeas, carrots, zucchini, and potatoes. Let them cook for 5 minutes.

    Add the yellow squash and dried apricots. Continue cooking until the vegetables are tender, about 15 minutes.

    Add the cilantro, salt, and pepper, then turn off the heat.

  6. 6

    In another pot over very low heat, add the couscous and 1 cup of the meat and vegetable broth. Cover and let it absorb the liquid for a few minutes.

    Add a tablespoon of melted butter and fluff the couscous to separate the grains. Add another cup of broth, let it absorb, then add another tablespoon of butter and fluff again. Repeat these steps about 4 times until the couscous is cooked through. Transfer the couscous to a serving dish and top with the vegetables and meat.

ام لأربعة اولاد وأخصائية بشره وتجميل ولكن من هواياتي الطبخ تعرفت على عدة مطابخ عالميه اثناء اقامتي في الولايات المتحدة الامركيه دخلت دورات في الطبخ لأحضر لأولادي ما يحبونه فأصبحت مغرمه في المطبخ ❤️واتابع عدة برامج لطبخ عالميه وعربيه أصبحت احضر الطعام لاصحابي في الحفلات والمناسبات فذلك يدخل السعاده لي 😀وأحب ان أغير في الوصفات على ذوقي لا أتقيد بوصفه محدده فالطبخ هو فن من الفنون فهو لوحه فنيه أشكلها على ذوقي فأحببت ان انقل خبرتي البسيطه وهوايتي لمن يرغب في تعلمها ففتحت صفحه لي على الانستغرام abby_cuisine وأعجبتني فكرت شهيه فأحببت المشاركه في الموقع وأتمنى ان تعجبكم الوصفات مع تحياتي 🌺🍀🌹
