Ingredients

6 servings
  • 2 cupbasmati rice
  • Khade masale
  • 1tspn shahi jeera
  • 6black pepper
  • 2bay leaves
  • 1small stik cinnamon
  • 4small cardamom
  • 4cloves
  • 1star anies
  • 1badi cardamom
  • 1 pinchnutmeg powder
  • For vegetables
  • 2capsicum cut in cubes
  • 6big onion cut in slice
  • 2carrot cut in small cubes
  • 1 cupmushroom chopped
  • 1 cuppaneer cut in cubes
  • 1 cupbeans chopped
  • 1 cupboiled peas
  • 1 handfulfresh mint leaves
  • 1 cupcoriander
  • 2green chilli
  • 1tblspn grated ginger
  • 2tblspn crushed garlic
  • 1 cupcurd
  • 1tspn of saffron strands
  • 5tblsp milk
  • For masale
  • 2tblspn ghee
  • 1tspn shah jeera
  • 1tspn cumin powder
  • 1tspn coriander powder
  • 1tspn chilli flakes
  • 2tblspn biryani masala
  • 1tspn black pepper powder
  • 1tspn chaat masala
  • 2tblspn kasoori methi
  • to tasteSalt
  • For garnish
  • Fried onion
  • Fried cashews
  • leavesCoriander

Steps

  1. 1

    First pre boiled rice.take a big thick bottom pan add water and rice let it simmer in low flame add 1 tsp oil 1 tspn salt and all khade masale and cook it till 70% done drain out excess water.

    Now take a big wok or handi add ghee to it now add jeera let it crackle now add ginger and garlic stir now add onion to it let cook for 5 min when it changes the colour add all chopped vegetable one by one and stir continuously now add all masale then add curd and stir continuously for 5 min cover it for 5 min now for layer add 1 layer of rice add mint leaves add coriander leaves fried onion saffron milk again repeat the procedure now lastly cover with lid for 15 min in low flame or in dum.

    It's ready to serve garnish with coriander leaves fried cashew and fried onion
