Ingredients

  1. For Shawarma
  2. 300-350 gboneless (thigh or breast) chicken sliced
  3. For Marination
  4. 1/2 cupyoghurt
  5. 2 teaspoonvinegar
  6. 1 teaspoonolive oil
  7. 1Garlic clove crushed
  8. 1/4 teaspoonpepper
  9. 1/4 teaspoonred paprika (adjust)
  10. 1/4 teaspooncinnamon
  11. 1/8 teaspoonnutmeg
  12. 1/8 teaspoonground cloves
  13. For Shawarma sauce
  14. 1/2 cupTahini (homemade or store-bought)
  15. 1garlic cloves crushed
  16. 1 tablespoonsyoghurt
  17. 2 teaspoonlemon juice
  18. For Pita Bread
  19. 1 cupwarm water
  20. 2 teaspooninstant yeast
  21. 3 cupsall purpose flour
  22. 2 teaspoonsalt
  23. 2 teaspoonolive oil
  24. For Assembling Shawarma in Pita Bread
  25. 1onion thinly sliced
  26. 1cucumber sliced
  27. 1/4 cupschopped parsley
  28. 1/4 teaspoonlemon zest
  29. 1de seeded tomatoes thinly sliced
  30. as requiredLettuce leaves (optional)
  31. as neededPickles (optional)

Steps

  1. 1

    In a large bowl, combine all ingredients mentioned under Marination section. Add sliced chicken and coat well.Cover and Refrigerate for 12-14 hours

  2. 2

    In a large saucepan, cook chicken with Marination over medium heat until done. Do not overcook

  3. 3

    While the chicken is cooking, prepare the sauce. In a small bowl, mix tahini, crushed garlic, lemon juice and yoghurt. Set this aside

  4. 4

    For Pita Bread

  5. 5

    In a bowl, add flour. Make 2 wells, add yeast and salt in each. Gently mix

  6. 6

    Add warm water and oil. Knead for 8-10 minutes into smooth dough. Coat dough with little olive oil.Cover and rest for 2 hours

  7. 7

    Gently deflate the dough and turn it over lightly dusted flour surface

  8. 8

    Divide the dough into equal portions. Roll each portion into roti

  9. 9

    Heat tawa, cook on both sides. Pita bread will puff up nicely

  10. 10

    To Assemble

    In a large bowl, add onions, tomatoes and cucumbers. Sprinkle lemon zest, salt and pepper. Add parsley and pickles. Mix well. Set aside

  12. 12

    Place enough chicken on pita bread so that it covers 1/4 of pita bread. Add the veggies and pour some prepared tahini sauce over it. Roll the bread and Shawarma in Pita Bread is ready

  13. 13

    Serve warm with Falafel/Salad or Hummus
