A friend gave me this recipe when I was living in Barcelona. The original recipe included tuna and cilantro, but I left those out. Today, I decided to try it since we love legumes, but we don’t eat them as much in the summer because of the heat! The result... a unique, delicious, and refreshing dish!

Place the cooked chickpeas on a serving platter.

Dice the cucumber and tomato, finely chop the onions and red bell pepper.

Mix everything together. Add the olive oil, apple cider vinegar (adjust the amount to taste), cumin, and salt. Stir well to combine.

Refrigerate the salad so it chills and the flavors blend together.

Serve cold. For a nice touch, serve it on top of toasted rustic bread.
