Soak 2 cups of bulgur in 2 cups of water for half an hour.

Prepare the filling by frying the onion, then add the ground meat, sprinkle with spices, and stir until the meat is cooked. Add almonds, pine nuts, and walnuts, stir, then drain the filling and let it cool.

Grind the bulgur and onion twice through the machine. On the third pass, add the meat to the machine, sprinkle with spices and salt, combine the kibbeh dough, and start shaping into discs.

Fry the kibbeh in hot oil over medium heat.
