Dal baati churma, this three -in-one treat is a typical Rajasthani treat. The Rajasthanis specialise in serving sweet & savoury dishes in combinations that steal the heart and delight the taste buds.
A platter of semi sweet churma, spicy dal and baati,is one such traditional combination. Fresh baatis drowned in pipping hot dal is a perfect accompaniment for churma.

Soak all dals for 30 mins

Wash & drain dals and keep aside

In a cooker, Add all dals,turmeric, salt and enough water & give 2 whistles

After 2 whistle switch off the flame

For tempering dal : Heat a wok add ghee and once the ghee heats, add garlic, asafoetida, saute then for few seconds.add onions add saute till raw smell goes away.

Next add green chilles, red chilli powder, turmeric, coriander powder, salt and give it a mix

Add tomatoes, boiled dals mix well then add coriander leaves, give it a stir and ur dal is ready

For Baati : In a bowl add wheat flour, salt, melted ghee

Mix them nicely till the texture of flour resembles bread crumbs

Add little water & knead it into a stiff dough

Once the dough is ready divide it into portions.

Make cross sign on the dough ball and next step is to bring it together

Tip : do nt press it too hard or leave it loose

Bake the baatis in gas burner, keep flipping them & ensure they don't burn

Churma : crush few baatis and transfer them in a grinder jar, crush it into coarse powder

Heat a pan add ghee, cardmom pods, chopped almonds

Saute them till it's nice and fragrant

Ensure thtthey do not change colour

After few seconds add crushed baatis

Saute them on medium flame for 5 mins & transfer them it into bowl

Allow mixture to cool down

And then add powdered sugar. Mix well

Our dal baati churma is ready

Pour hot dal & ghee over the baatis

Serve hot with churma
