Portuguese Pastéis de Nata

These pastéis de nata are one of the most famous desserts in all of Portugal, also known as pastéis de Belém. The original recipe is secret and known by only three people in the world, so after searching online, I settled on the one from lacucharinamagica—delicious! Although these may not look exactly like the ones you’ve seen, I assure you the flavor is very close. This recipe makes about 12 pastries.

Use a silicone muffin pan for six muffins.

Roll out the puff pastry with a rolling pin and cut circles using a glass.

Grease the muffin pan with a little butter and line each cup with the puff pastry to form tartlet bases. Set aside and refrigerate.

In a bowl, beat the egg yolks with the sugar.

Add the cornstarch and heavy cream.

Pour the mixture into a saucepan with the lemon peel and heat until it starts to boil, stirring constantly. Remove from heat and let cool slightly.

Preheat the oven to 400°F (200°C).

Fill the puff pastry shells almost to the top with the cream mixture.

Bake for about 25 minutes. You can sprinkle them with powdered sugar and/or cinnamon. Enjoy!
