Boil the potatoes in salted water until cooked.

Then drain and let the potatoes cool enough to handle. Cut into cubes but leave the skin on.

Heat the olive oil in a frying pan.

While the oil is heating. Sprinkle some salt, cayenne pepper and black pepper onto the potatoes. Gently mix it all together.

Add the potatoes into the frying pan. Moving them around often in order for them not to stick.

Fry them until slightly cripsy on the outside.
