Measure your ingredients.

Separate eggs and put the yolks in one bowl with the whites in another.

Preheat your oven to 170 degrees Celsius and prepare a 10 inch baking tin

Place flour,sugar(set aside 1/4 cup of sugar),salt,Orange zest and baking powder into a bowl and mix well using wire whisk or wooden spoon.

Make a well in the flour mixture and add yolks,oil,Orange juice and vanilla.beat until smooth using a wire whisk for about a minute.

In a separate bowl,whisk the egg whites until soft peaks then gradually add the sugar you had set aside beating until stiff peaks.

Using a rubber spatula or whisk fold in the egg whites gently to the batter in 3 portions being careful not to deflate the batter.

Once well mixed,pour your batter into your prepared tin and then using a skewer gently stir the batter to remove air bubbles.then bake for 50 -60 minutes or until knife,skewer or toothpick comes out clean.

Let it cool for about 10 minutes in the tin before removing from the tin.
