Ingredients

  • 1aubergine
  • 1yellow pepper
  • 1onion
  • 1large chicken breast
  • 1 cartonpassatta
  • 1 teaspooncumin seeds
  • 1 teaspooncumin
  • 1garlic clove
  • 1 tablespoontandoori curry power
  • 1 tablespoonnatural yogurt
  • Salt and pepper

Steps

  1. 1

    Chop aubergine, peppers and onion. In chunks. On a hot girdle roast veg until golden brown.

    In pan fry chicken with a little oil and the garlic.

    Add the cooked veg.

    Add the cumin. Salt and pepper and curry powder.

  5. 5

    Add the passatta.

    Simmer for 20 mins.

    Before serving stir in yogurt.

  8. 8

    Serve with flat bread. And a beer! #coldbeer
