Boil the potatoes, peel and mash it well.

Add salt, turmeric,chilli powder, garam masala, amchur power,pepper, chaat masala, coriander powder to the mashed potatoes and mix well

Make thick cup shaped Patties of the potato stuffing, using your thumb and the forefingers.

Now mix cornflour with water. Dip the patties in the cornflour mixture and then coat with the vermicelli/semiya/sevai.once the birds nests are in the right shape refrigerate it for 20mins

Meanwhile grate the paneer, add salt and pepper and Knead it to a soft dough... Make small oval balls in the shape of eggs from the paneer dough. Deep fry the panneer eggs just until it's cooked. The colour should not change. So be quick to remove it from the oil and set it aside.

Take the birds nests from the fridge, heat the oil in a pan/kadai and start deep frying the birds nests in low medium flame. Ensure that the nest is well cooked inside, at the same time the vermicelli is not burnt.

Now arrange coriander leaves and the paneer balls on the birds nests and serve hot with ketchup
