
Grilled Flank Steak
Flank steak is extremely lean so it really should be marinated or it will be dry. Cook this under the broiler or over a bed of hot charcoals on an outdoor grill. Any leftover slices can be used in a steak and avocado wrap for lunch.

Flank steak is extremely lean so it really should be marinated or it will be dry. Cook this under the broiler or over a bed of hot charcoals on an outdoor grill. Any leftover slices can be used in a steak and avocado wrap for lunch.

Rub both sides of the steak with pepper. In a shallow dish just large enough to hold the steak, whisk together the oil, lemon juice, soy sauce and garlic. Add the steak, coating both sides well with the marinade, turning it once, for 20 minutes.

Remove the steak from the marinade, and grill it on an oiled rack over glowing coals, 5 minutes per side, brushing it occasionally with some of the marinade and turning it only once, for medium-rare meat. OR broil the steak under a preheated broiler about 4" from heat, turning it once, for 5 minutes per side for medium-rare meat. Discard marinade. Transfer steak to a warm platter. Let it stand for 5 minutes under a loose foil tent. Slice the steak thinly across the grain and serve. 781 calories, GL=0, Glycals=2
