Ingredients

  1. 450 gChicken (any cut)
  2. 2Large onions sliced
  3. 1/2 tspCumin seed
  4. 1Bay leaf
  5. 1/2 inchCinnamon stick
  6. 1Whole Aniseed
  7. 2Whole Cardamoms
  8. 1 tspWhole peppercorn
  9. 1/4 tspGround Cumin powder (jeera)
  10. 1/3 tspGround Turmeric powder (haldi)
  11. 2Green chillies finely sliced (optional or vary quantity to taste)
  12. 1/2 tspGround Coriander powder (Dhaniya)
  13. 1/4 tspGround Garam Masala powder
  14. to tasteSalt
  15. 1 1/2 tbspMadras Curry powder
  16. 3-4 clovecrushed garlic
  17. 1 canPlum tomatoes
  18. 1 cmcube of ginger finely grated
  19. 1green capsicum / bell pepper sliced
  20. 1 cupboiled water (optional)
  21. 1 cupfinely chopped Fresh Coriander

Steps

  1. 1

    In a heavy based pan heat up the cooking oil

  2. 2

    Add the cumin seeds, aniseed, bay leaf, cardamom, cinnamon stick and garam masala to the oil and fry for 1 minute.

  3. 3

    Then add the garlic and ginger and green chillies and fry until garlic ginger is golden brown.

  4. 4

    Add the chicken and fry until golden brown.

  5. 5

    Add the sliced onions and cook until onion is golden brown (approx 10 min on medium heat). Add salt to soften the onions.

  6. 6

    Add the rest of the spices and cook until the oil separates from the masala mixture (approx 10 min)

  7. 7

    Add the can of plum tomatoes and cook for further 5 min or until sauce thickens

  8. 8

    If you want the sauce slightly looser add the boiling water (this is optional)

  9. 9

    Add the green peppers and cook for further 5 min.

  10. 10

    Garnish the curry with the fresh coriander, and switch off the heat. Serve with boiled rice or naan bread. Enjoy
