My boyfriend works third shift and loves to come home in the morning to see what tasty treats I've concocted in the night. The first time I made this recipe was randomly at 4:30 am. Let's face it, fudge is better after dark.

Line a 8x8 dish with aluminum foil, and measure out the powdered sugar into a large mixing bowl.

Melt butter in medium sauce pan over medium-low heat. Then add the brown sugar and milk, stirring until dissolved. Bring to a boil for 2 minutes, stirring frequently. Remove from heat, and stir in peanut butter and vanilla extract. Pour over powdered sugar in large mixing bowl. Beat until no clumps remain.

Scrape into lined dish and refrigerate until firm, around 2 hours. Remove fudge with foil and cut into squares.
