Tarta de Santiago
My son Diego's favorite.
Steps

If you didn't buy ground almonds, finely chop or grind the almonds.

Mix the sugar, cinnamon, and lemon zest, then add to the almonds.

Add the eggs and mix everything together well, but do not beat.

Pour the mixture into a greased 9-inch (23 cm) round cake pan.

Bake for about 30 minutes at 340°F (170°C) with the oven preheated, using both top and bottom heat.
