Ingredients: 4-5 small aborigines diced; 3-4 zucchini diced; 4-5 medium potatoes diced; 1 onion chopped; 3-4 cloves garlic sliced; 2-3 carrots diced; 2 bell peppers cut in small pieces; 1 hot banana pepper if you like the heat; 1/2 cup olive oil; to taste Salt; to taste Ground black pepper; 1/2 tsp oregano; 1 bay leaf; 2 tbs tomato paste; 3/4 litre water

Ingredients

6-8 people

4-5small aborigines diced
3-4zucchini diced
4-5medium potatoes diced
1onion chopped
3-4 clovesgarlic sliced
2-3carrots diced
2bell peppers cut in small pieces
1hot banana pepper if you like the heat
1/2 cupolive oil
to tasteSalt
to tasteGround black pepper
1/2 tsporegano
1bay leaf
2 tbstomato paste
3/4 litrewater

Steps

First wash dice and chop all the veggies

Now on a big pot add onion garlic oregano and bay leaf and sauté till transparent

Now add zucchini and keep sautéing than add the eggplant and keep sautéing

Now add all the rest of the veggies and sauté everything all together

Now add water and tomatoes paste and bring to a boil stirring occasionally

Now add salt and pepper to your taste and cook at medium heat for about 1 hour
