Quick summer side dish. You can nibble on it with a fork or eat it with pita bread. I got the main idea from Moroccan cuisine.

Ingredients

30 minutes
4 servings
  1. 300 gramscourgette
  2. 1garlic head
  3. Fresh chopped parsley
  4. Dry thyme
  5. Dry mint
  6. 1-2 tablespoonsapple cider vinegar
  7. Halfteaspoon salt
  8. Black pepper
  9. Cayenne pepper
  10. 1 teaspoonground cumin
  11. 2 Tablespoonsolive oil

Cooking Instructions

    Cut courgettes into medium sized pieces

  2. 2

    Steam cut courgettes and cleaned garlic head. Don't let courgettes cook thoroughly but rather slightly firm.

    Mash garlic with mortar and pestel. Add salt, black pepper, cumin, cayenne pepper and vinegar.

    Put sauce over courgettes. Add the herbs. Pour the olive oil. Mix well and serve warm or cold. Serve yoghurt as side dish.
