Ingredients

  • 1 gallonfresh good quality water (if your tap water is not drinkable don't use it.)
  • 1 CupKosher Salt
  • 20whole Pepper Corns
  • 2fresh Bay Leafs
  • 1/4 CupHoney
  • 10whole sightly bruised Sage Leafs
  • 1heavy pinch of Red Pepper Flake
  • 2large pieces of Lemon Peel

Steps

  1. 1

    Dissolve the salt and honey in the water.

  2. 2

    Add everything else.

  3. 3

    I brine my Chicken for 2 hours bone in, or 1 1/2 hours boneless.
