Very popular cuisine of Hyderabad. It is very healthy, rich and tasty dish.

Rinse the apricot well. Soked them in enough water overnight.

Remove the apricot from water and keep the water aside.

Deseed the apricot. Break the hard seed shell. Throw away the hard kernel and keep the almond like nuts aside.

Add reserved water, soaked apricot, sugar in a pan and cooked for 5 to 6 minutes. Press the apricot slightly and cook for few more minutes till the apricot becomes soft and mushy.

You can also mash the apricot with your hand and then add to the pan or take a small portion of cooked mixture and grind it make a purée. Add this puree to the pan and mix well and cook till the mixture become thicker.

Switch off the gas. Add saffron strands. You can Serve Khubani ka Meetha either hot or chilled.

Serve it with malai or vanilla ice cream and garnish with apricot seeds. Best if serve with chilled.
