I've always found that throwing away the potato peel is always such a waste of a potato. This recipe is a great way of cutting down on wastage.

Make sure you wash the potato before you peel it. You can keep the peelings in water for a number of hours so they don't go brown but make sure you take it out of water an hour or so before using. Alternatively you can dry your peelings by dabbing them with kitchen roll. However you choose to do it ensure the peelings are fairly dry.

Preheat oven to 200c

Next drizzle with olive oil and sprinkle some salt and mix well.

Line a baking tray with greaseproof paper and spread out the potato peelings and transfer to the oven.

Bake for 20-25 minutes or until golden brown.

Transfer onto a plate and sprinkle with more salt if desired and serve immediately.
