Delicious pumpkin fritters, a traditional treat from Valencia, especially popular during Las Fallas festival.

Peel and cut the pumpkin into pieces, then boil until tender. Let it cool, then mash with a fork to make a purée.

In a large bowl, dissolve the yeast in a little warm pumpkin cooking water.

Add the mashed pumpkin and a pinch of salt, then mix. Add the flour and the rest of the water, and knead the mixture by hand. Let the dough rest for about 30 minutes so it can rise.

Heat plenty of olive oil in a deep skillet. Once the oil is very hot, start frying the fritters.

Keep a bowl of water nearby to dip your fingers in, so the dough doesn't stick to your hands while shaping the fritters.

Place the fritters on a plate lined with paper towels to absorb excess oil.

The best way to enjoy them is sprinkled with sugar, and they're even better served with a cup of thick hot chocolate.
