Combine butter, 1/4 C powdered sugar, lemon extract, and vanilla extract in a mixing bowl. Whip on medium speed until light and fluffy.

Gradually add flour until thoroughly combined and mixture forms a loose dough.

Shape into small, bite sized pieces and spread out on a baking tray lined with parchment paper.

Bake at 350° for approximately 15 minutes or until bottom of cookies begin to brown.

Let cool 5 minutes. Roll cookies in remaining powdered sugar. Let sit for 1 hour before storing at room temperature in a closed container.
