  1. 500 gmascarpone
  2. 4M eieren
  3. 120 gfijne suiker
  4. 150 mlwater
  5. 4theelepels koffie
  6. 75 mlMarsala wijn
  7. 1pak LU Boudoirkoekjes
  8. cacaopoeder

    Koffiemengsel maken

    In een grote kom de suiker doen

  3. 3

    Eiwit en dooiers scheiden (eigeel in grote kom met suiker, eiwit in kleinere kom)

  4. 4

    Eiwit stijfkloppen (mixer - zie dat er nix eigeel terecht komt hier)

  5. 5

    Eigeel en suiker op hoge snelheid tot witgeel egaal geheel

  6. 6

    Doe een derde vd mascarpone bij het eigeel en suiker, en meng in z'n geheel. Die dit nog 2x met elk een derde van de mascarpone opnieuw.

    Doe 4 theelepels koffiemengsel bij het mengsel

  8. 8

    Meng een derde van het eiwit bij het mascarpone mengsel, spatel luchtig laag op laag, en herhaal dit 2x tot al het eiwit hierin zit. Je hebt nu normaal een luchtig mengsel.

    Boedoirkoekjes onderdompelen in koffiemengsel. Doppen in soepkom, horizontaal, 5s onderhouden +-. Niet teveel of het wordt te week. Niet te weinig of je hebt geen smaak mee.

    Kom: 1 laag koekjes, dunne laag mengsel erover, terug een laag koekjes, rest van mengsel erover.

  11. 11

    In koelkast bedekt laten opstijven voor (2-4u, sommige zeggen 8u)

    Serveren met cacaopoeder
