Ingredients

  • 2rotisserie chicken breasts diced
  • 1carrot chopped
  • 2 stalkscelery chopped
  • 1onion chopped
  • 3garlic cloves minced
  • 6 cupschicken broth
  • 1 cupwhite rice
  • 1 tblsolive oil
  • 1 cupheavy cream
  • 1 tspItalian seasoning
  • 1/4-1/2 tspcrushed red pepper
  • 1/4 tspginger
  • 1/2 tsplemon juice
  • to taste Salt and pepper

Steps

  1. 1

    In instant pot sauté onion, celery, carrot and garlic in olive oil until onion is translucent

  2. 2

    Add all remaining ingredients and mix well

  3. 3

    Pressure cook 10 minutes then natural release 10 minutes. Release remaining pressure

  4. 4

    Add heavy cream, stir and serve
