Simple Egg Noodles

I used what I had to hand for this but you can add other ingredients such as broccoli and bell peppers. The flavours aren't overpowering so I would suggest tasting it after step 6 and seeing if it needs more soy sauce, vinegar etc.

In a small bowl beat the eggs and set aside.

Heat a wok with sesame oil, and add in the garlic, chilli, star anais and red onion. Cooked for 3-4 minutes or until the onions have softened.

Add in the peas, mushrooms and spring onion and cook for 5-10 minutes, remove from the pan and set aside.

Next using the same wok add a little more sesame oil if needed and pour in the eggs. Scramble them over a gentle heat.

Add in the salt, pepper, vinegar and soy sauce. Mix well.

Next add in the egg noodles and vegetables back to the wok. Season with more salt and pepper if needed.

Increase heat to high and toss fry for two minutes. Serve immediately.
