Ingredients

4 servings
  1. 3 cupsrice
  2. 3medium sized carrots, grated
  3. 2medium sized onions
  4. 2medium sized Zucchinis
  5. 3 clovesgarlic, crushed
  6. 1 bunchFresh corriander,
  7. 1green pepper
  8. Curry powder
  9. to tasteSalt
  10. 3 tablespoonsVegetable oil,
  11. 1 teaspoonTumeric,

Steps

  1. 1

    Fry your onions until they are golden brown

  2. 2

    Add your crushed garlic

  3. 3

    Add your grated carrots

  4. 4

    Now add all your dry spices

  5. 5

    Add your green pepper, zucchini and corriander

  6. 6

    Add your rice, I opted not to wash it first

  7. 7

    Mix well and ensure all the rice is covered with the spices

  8. 8

    Now add hot water, 3 cups and give one final stir

  9. 9

    Lower the heat and allow the rice to steam

  10. 10

    Serve with fresh cut tomatoes, green chilli or avocado (optional) I used only green chilli

  11. 11
