Steps

Take maida in a bowl and make well in centre

Put salt, sugar, 3 tbsp ghee in the centre and mix them.

Then add water to bind medium soft dough.

Close with samp.cloth for 30 minutes.

Meanwhile take the green chillies and finely chopped it and microwave for 3-4 minutes till completely dry.

Cool and grind to powder.

Then make lemon sized balls and sprinkle maida and roll to a very thin roti, as thin as possible.

Don't worry about the shape at this stage.

Then apple ghee liberally on the roti.

Then sprinkle mint powder and dried green chilli powder.

Then make pleats like a fan which kids make with paper.

Pull the roti and twist to make a coil.

Repeat to make more such coils.

Rest these coils for about 10 minutes.

Then sprinkle maida and roll these coils to a roti of medium thickness.

Shallow fry on hot tawa till crisp.

Just press the roti from sides to release the flakes.

Repeat with the rest of the coils to make more parathas and serve hot with the subjis of your choice.
