In a mixing bowl mix the wet ingredients together with sugar and stir until all the sugar has dissolved

In a separate bowl sift your flour with baking n cocoa powder and add to the wet ingredients folding inn gently

In a cup add 1/4 hot water and add coffee stir n add to your cake batter this is to help fully dissolve the cocoa.

Ina another bowl put your raisins, peanuts and flour mix together n sift the excess flour then add your raisins in the batter and mix inn.Then pour your cake batter in a baking tin n bake for 30-40(I have noted ovens are different some cook faster others longer advisable to check at the 30th min to know how much longer time to add or if its ready),until u insert a toothpick comes out dry.

Once done place in a wire rack n let it cool completely.

FROSRING: Prepare your cream. 60ml milk,120 ml double cream, 25g sugar,175 dark chocolate.

In a sauce pan put your milk,sugar,double cream n stir before placing on a medium heat once it starts to bubble on the side remove from heat an pour in the bowl containing the chocolate so they can melt continue stirring for like 3mins n let it rest for about 10mins. Refrigerate in a airtight bowl for like 2hrs. Place your mixer paddles/whisk n the mixing bowl in the refrigerator too this will help when whisking as the cream won't take long to double n thicken.

Divide your cake into 2 half's.(Note this cake is quite spongy so it might break a little so cut carefully) n top with cream n fruit's if u like (pineapple, strawberry, thorn melon,passion), then place the other half on top n cover with the remaining cream. U can also spare some for piping. Dust with chocolate chipping add some Strawberry's or cherries n refrigerate to firm up your cream.

Serve as dessert or with milk.
