Scrape the bitter gourds and reserve the scraping.slitthem vertically and remove the seeds.rub two tablespoon salt all our the bitter guards and the scraping.set aside for two hours.Wash thoroughly and squeeze dry.

Heat sufficient oil in a non stick kadai and deep fry bitter gourds tile dark brown.Drain on absorbent paper.

Heat three tablespoons of oil in a non stick pan,add the screening and saute till brown.add the onions and saute for two to three minutes.add the coriander powder,dry mango powder and red chilli powder and scute for another minute or two.

Add the bitter guards and adjust the salt cover and cook for two to three minutes.
