Wash the baingan wipe and make cut between but don't separate, check there is no worms in it.

Roast baingan on gas stove, gas tandoor, etc.

Cut vegetables finally.

Peel off the bagan

In a pan heat the oil add ginger,garlic, chilli, and sate for few seconds, add onion and sate, add tomatoes and cook well. Add roasted baingan mash it and mix it well, cover it for 1 minute.

Add salt to taste and 1tsp kashmiri red chilli powder. Mix well and cook for few minutes.

Switch off the stove.cover the baingan bharta for few minutes.

Garnish with green coriander and serve with roti or rice and daal.

You can add 1tsp raw mustard oil before garnish.it's optional.
