Into a mixing bowl add the margarine and sugar,then using a hand mixer,mix them till fluffy.

Then add one egg and mix to avoid cuddling and facilitate proper incorporation of the eggs.Then add the grated lemon zest,be carefull not to grate the white part its normally bitter.

Then in another bowl seive your flour thats is when mixed with the baking powder and soda to facilitate aeration and also proper incorporation of the baking and the flour.

Then add the flour in the wet ingridients the one prepared earlier on.Add a little at a time till all in and mix in one direction to avoid deflation.

Then when attain the right consistency prepare you cupcake tin that is by aplication of magarine or butter onto the base and sides to avoid the cupcakes from sticking onto the tin.Then dust lightly with some flour and pour in you mixture.

For a consistent size of the cakes select either of your spoons that you will use to place the mixture in the holes.

Half fill the holes to avoid and overflow.Bake till well browned.
