A traditional Mexican dish from Sinaloa, perfect for a get-together with friends.

Slice the hot dogs and bacon as desired. Cut the white onion and jalapeño peppers into thin strips. Set everything aside.

In a large skillet or wok, melt the lard over medium heat. Once hot, add the bacon and cook until it releases its fat. Remove the bacon and set aside so it doesn't get too crispy. Add the ground beef, ground pork, chorizo, and hot dogs to the pan.

Once the meats, chorizo, hot dogs, and bacon are cooked, add the white onion, jalapeño peppers, and chipotle peppers. Season lightly with salt and pepper (the hot dogs, bacon, and chorizo already contain some salt).

Wash, peel, and clean the cucumbers. Cut them in half lengthwise.

Slice the red onion into thin strips. Place in a bowl, season with salt and pepper, and squeeze lime juice over to marinate.

Once the meat mixture, cucumbers, and marinated red onion are ready, lightly heat the tortillas with a little oil on a griddle or skillet. Serve the meat mixture on the tortillas, and plate with cucumber, marinated red onion, and extra peppers as desired.
