Just made this trial batch for Bappa's arrival & it turned out to be perfect. Tried giving petal shape but failed miserably. My first try & I am elated 😍

Just made this trial batch
Take a thick bottom pan. Add 2 tsp ghee, grated paneer, crushed almonds, erythritol. Cook till roasts to a golden brown semi sticky texture on low flame. Add cardamom powder & mix. - 2
Take a thick bottom vessel. Add 100 ml water, remaining ghee (save few drops to grease your hands if required) & salt. Let water boil nicely. Switch off the stove. Add rice flour. Mix well & let it cook in steamed water by covering with a lid. Knead into a soft dough. Make small flat balls on palm. Make a valley to add filling & keep pressing sides to increase size of flat ball. Stuff & give shape. Steam in an idli maker / steamer for approx 12 mins. Relish.

Can be stored in refrigerator for 3-4 days. Don't forget to grease steamer plate while placing modaks. Stuffing can be replaced with coconut powder in place of paneer.
