In a large bowl, mix the ground lamb with salt and black pepper. Knead well. Take a metal skewer and shape the meat onto the skewer, then slide the meat off and arrange it in a baking dish.

Slice the tomatoes and onions, and add them to the baking dish with the meat. Preheat the oven and bake until the meat, onions, and tomatoes are cooked through.

To prepare the biwaaz salad, finely slice the onion and chop the parsley. Mix them together without adding salt or anything else, so they stay crisp.

Remove the baked kebab from the oven. Spread some red pepper paste on a flatbread, sprinkle some biwaaz salad on top, then add the kebab, onions, and tomatoes. Serve and enjoy—it's very easy and delicious!
