Ingredients

4 servings
  • 2 cupsall purpose flour (sieved)
  • 1 cupsugar
  • 1 cupmargarine
  • 1lemon juice squeezed
  • Lemon zest
  • Vanilla essence (I used lemon essence)
  • 1grated carrots
  • Pinchsalt
  • 1/2 (1 cup)milk
  • 4eggs
  • 1 tspbaking powder

  1. 1

    Preheat your oven to 175 degrees then grease your tin

  2. 2

    In a bowl, cream sugar and margarine till pale

    Beat one egg at a time then add to the cream

    Add vanilla essence, juice and zest and carrots then fold in flour alternating with milk till smooth

    Pour in your tin then bake.

    Serve with your favourite drink
