Risotto: one of my favorite dishes, combined with one of the Mediterranean aromas from my Ligurian homeland. A simple and delicious preparation.
Steps

Sauté the onion in 0.9 oz (25 grams) clarified butter with the thyme until the onion is translucent and softened. Add the rice and toast it.

Over high heat, add 1/4 cup (60 ml) white wine and stir until all the alcohol has evaporated.

Continue cooking the risotto, gradually adding the vegetable broth.
- 4
Remove the risotto from the heat and stir in the remaining butter and the organic Parmigiano Reggiano cheese.
- 5
Let it rest for a few minutes, add more thyme and a sprinkle of black pepper, then serve.
