Spicy Beef Stir Fry

A quick & tasty use for mince! I de-seeded the chillies but leave them in if you want it spicier. For the rice I have used a pouch of cooked microwave rice (about 50p-60p) but if you prefer you can use rice that you have cooked yourself. #budgetbasics

Place a large frying pan over a medium heat & brown the mince in batches. Set aside.Add about 2 tbsp oil to the pan & cook the mushrooms for about 2 minutes until starting to colour. Add the spring onions, chilli & garlic. Cook for another 2 minutes & add the rice. Stir well to coat the rice & cook for 4 minutes.

Add the mince back to the pan & stir everything together until combined.
Add the ginger & soy sauce, stir again & simmer for 5 minutes stirring occasionally.
Serve immediately.
