In a wok heat the butter and olive oil. Then add the onions and garlic and fry for about 5 minutes or until they have softened.

Add the spring greens and season well using the all purpose seasoning.

Then add the water and allow the greens to cook down.

Once the greens are wilted add in the dijon mustard and stir it in well.

Continue to cook until all the cabbage stalks are cooked through.
