Greek Yogurt Scones #Baking

My kids love this version of scones as they always said classic scones are to dry and stodgy.
This scone is soft and bouncy and moist and has a delicate neutral flavour which compliments salty or sweet fillings or can just be enjoyed plain.
They also freeze very well for up to 2 months.

My kids love this version of scones as they always said classic scones are to dry and stodgy.
This scone is soft and bouncy and moist and has a delicate neutral flavour which compliments salty or sweet fillings or can just be enjoyed plain.

Steps

Preheat oven to 220°c.

Grease and flour a square 25 or rectangular 21cm x 29cm cake or roasting pan.

Combine flour, icing sugar and oil with finger tips until the mixture resembles fine bread crumbs.

Add Greek yougurt to the flour mixture and with a spoon mix until just combined.

Press the dough down on a floured surface and about 2.5cm. Using a medium scone cutter make 16 scones.

Place them into pan and bakefor 20 minutes until they are lightly brown.

Remove from pan and serve.

Serve with plain butter, cheddar or gouda cheese or your favourite jam topped with cream.
