Without question, chicken chasseur is my favourite French dish. The combination of succulent chicken, meaty mushrooms and rich sauce never fails to satisfy. My version swaps out the wine for brandy. It's a little unusual, but I think it adds an extra dimension to the finished dish.

A spin off of onion soup and the forefather of my Kraut n Swiss Chicken (just substitute the baguette for stuffing.)

My husband requested this dish so I tried it out. I managed to cook this in a short time -- it was surprisingly easy!-Please simmer the chicken until it becomes tender. Please skim off the scum!-I use spicy curry roux for my family. If you are using sweet curry roux, add ketchup to your liking.-I recommend adding heavy cream or coffee creamer to make the taste mild. I bought family size of chopped beef it came in 3's I liked the extra gravy for rice you could probably use 1 can of mushroom soup and still work, or omit broth I only added it for more tender beef.
