In this dish I have done a little innovation with simple carrot and samolina indian halwa..I gave a texture, shape, more flavours, nutrition by stuffing dry fruits and an extra touch of taste by adding rose petals jam(gulkand).. My family is saying th't it has extra ordinary taste.. Do try this sweet yo'rself and relish the eve dussehra with loved ones

First of all wash, peel and shred the carrots..take a pan, pour clarified butter and cook the shredded carrots until the moisture of the carrots absorbed

Dry roast samolina in a heavy bottom pan till get pinkish colour and aroma of roasted samolina rise.. Add desi ghee, milk, sugar, cardmum powder, nutmeg powder, mava/khoya, cooked carrot and stir the whole mixture till get thick lump type consistency on slow flame..let the mixture slightly cool down

Mix sliced cashews and almond in rose petal jam

Take gujiya mould, grease it with a bit of ghee and put the carrot samolina mixture into both sides of the mould..put a small quantity of rose petal jam&dryfruit mixture on it and close the mould bhi. Gently(don't press the mould too much otherwise the flair will be broken)..demould it..make all the sweet pieces with same process

Garnish the sweet pieces with edible silver varak and sliced pistachios

📝 -Friends this is and't Gujiya..' have given it only the shape of gujiya..u can give this sweet burfi shape in the unavailability of gujiya mould.. in that case u have to set a thick layer of carrot, samolina mixture then a bhi.thin layer of gulkand -dry fruits mixture and again a thick layer of samolina carrot mixture in a greased tray..let it set fo' at least one hour then cut into square or diamond pieces as u wish

Tip_This can also serve hot like Hot gulabjamuns..then microwave the sweet pieces fo' 30 seconds and serve super delicious sweet dish
