Fennel & Pear Salad

The subtle sweetness of firm pear is so perfect for many salads. I have two favourite pear salads, ‘Rocket & Pear Salad’ with French dressing and this ‘Fennel & Pear Salad’ with lemony dressing. The dressing is lemony but not very sour. The reason why it is so lemony is because of the grated lemon zest. Again, this salad is oil-free as I like.

Combine the dressing ingredients in a large bowl.

Cut the Fennel bulb in half and thinly slice just like you slice an onion. Save some Fennel leaves for garnish. Thinly slice the Pear as well.

Add thinly sliced Fennel and Pear into the bowl and toss to combine. Sprinkle with the saves Fennel leaves.
