Ingredients

  • 1 Cupmaida/all purpose flour
  • 1/2 CupCurd
  • 1 pinchsalt
  • 1 pinch Food colour
  • 1/2 tsp Baking soda
  • 1 CupSugar
  • 1 CupWater
  • 1 tspCardamom powder
  • 3-4Safron strands (optional)
  • as neededOil for frying
  • 1 tbspGhee

Steps

  1. 1

    First of all prepare sugar syrup.

  2. 2

    In a heavy-bottomed pan, add sugar and water (1:1)

    Add lemon juice. Lemon juice will prevent sugar from crystallizing.

  4. 4

    Bring it to a boil. Boil for around 5 minutes on medium high flame. Keep a close watch on the syrup for it's consistency.

    Remove and discard the impurities as they start to collect on top. At this point add eliachi powder, saffron strands.

    Lower the heat, dip spoon in the syrup and take it out. Do not touch for the first few seconds, it will be very hot. Touch the syrup with your finger and if it coats your finger it means that it is about to reach it's first string consistency. To taste - press your forefinger and thumb together. Start pulling them apart.

  7. 7

    If the thread or sugar string between your finger and thumb doesn't break after pulling apart, single thread or 1 string sugar syrup is ready. Take it off the flame and continue with the recipe.

    Now start preparing. Jalebies

    Mix Maida, salt,food colour and curd well.

    Make this mixture lump free add water as required.

    Now add baking soda in this. All this batter add into Jalebi maker.

  12. 12

    Heat the oil. It should not be too hot.

  13. 13

    Now with the help of Jalebi maker prepare Jalebi in oil- keep fame low.

  14. 14

    Now fry jalebies well and after that remove jalebies from oil and drop into sugar syrup for 3-4 minutes.

    Now remove jalebies from sugar syrup and serve it.
