Ingredients

3 servings
  1. 6 pieceseggplant
  2. Romaine lethuce for bedding
  3. 50 gmsred bell pepper, thinly sliced
  4. 50 gramsgreen bell pepper, thinly sliced
  5. 30 gramswhite onion, sliced
  6. 15 gramsgreen onion, 1 inch cut
  7. Salt an pepper to taste
  8. For dressing:
  9. 1/4 cany vinegar
  10. 1/4 cwater
  11. 1 tsp.White sugar / honey

Steps

  1. 1

    Wash lethuce with 1 tsp of apple cider vinegar and lemon juive

  2. 2

    Grill whole eggplant, peel, and cut into 1 inch

  3. 3

    Mix altogether with the other ingredients

  4. 4

    Add the dressing and toss it

  5. 5

    Serve warm or cold
