Ingredients

3 servings

6 pieceseggplant
Romaine lethuce for bedding
50 gmsred bell pepper, thinly sliced
50 gramsgreen bell pepper, thinly sliced
30 gramswhite onion, sliced
15 gramsgreen onion, 1 inch cut
Salt an pepper to taste
For dressing:
1/4 cany vinegar
1/4 cwater
1 tsp.White sugar / honey

Wash lethuce with 1 tsp of apple cider vinegar and lemon juive

Grill whole eggplant, peel, and cut into 1 inch

Mix altogether with the other ingredients

Add the dressing and toss it

Serve warm or cold
