On this occasion I used a pork Lion that was about 400g so I halved the recipe.
Steps

Preheat oven to 180c.

Line a chopping board with foil.

In a small bowl combine the garlic, oregano, parsley, thyme, basil and sage. Set aside.

Generously season the pork with salt and pepper.

In a large pan heat the olive oil.

Add the pork to the pan and cook in all sides.

Transfer the pork to the foil.

Coat the pork well with the herb mixture.

Cover the pork with the butter.

Then wrap in the foil and transfer to the oven for around 25-30 minutes. Ensure the widest part of the pork reaches 150 degrees.

When the pork reaches its temperature remove from the oven and let it rest for 5-10 minutes.

Slice against the grain and serve.
