Sieve the grated coconut,so that you have a cup of heavy coconut milk(tui la kwanza) and a cup of light coconut milk(tui jepesi)..break up the tambi in to small piece's as below, and crush your cardamons till it becomes powder like.

In a sufuria add in your light coconut milk,sugar and cardamons and bring it to a boil,and stir the mixture well to avoid the sugar burning.

Once the mixture has boiled add In your tambi and mix it well until well coated(not use a light of the light coconut milk)once the light coconut milk has reduced add the heavy coconut milk stir well (the heat should be low/medium) you can choose to cover the sufuria for some time or transfer the tambi to a baking pan and bake it for 15mins at 160°

Finally ready to eat, you can choose to brown it more or have it just like this..enjoy it with some kahawa (coffee)
